Creamy Potato Soup:

This was submitted by CC Wife Sarah B. and we cannot wait for you to try it! This would be so tasty on a fall or cold day!

What You Need:

4 large potatoes
3 tbs flour
Pinch of chili powder
1/2 cup butter
2/3 cup heavy cream
2 cups milk
1-2 cans evaporated milk
1 cup water* for thinner soup
1/3 c sour cream for thicker soup
Salt and pepper (to taste)


Directions:
Peel and dice potatoes

Toss flour, potatoes, salt, pepper and chili powder in a bowl. Set to the side for 10 minutes

Melt butter in soup pot - careful not to brown

Add potatoes to pot, pour in cream, evaporated milk, water* and milk. Allow to cook until potatoes are tender, 20-30 minutes. Stir occasionally

Once potatoes are tender, pour half of the soup into a blender and purée, or beat with mixer/immersion blender. Stir back into soup pot.

Serve with cheese, bacon, chives, sour cream or any other desired toppings.
