Enchilada Tortellini Skillet

What You Need:

16 ounces cheese tortellini

1 pound ground beef

1 tablespoon taco seasoning

2 cups red enchilada sauce

1 (15 ounce can) black beans, drained and rinsed

1 can corn (or you can do frozen or fresh)

1 cup or so of fiesta blend shredded cheese

1/4 cup Sour cream (optional)

1 T Cilantro, chopped (optional)

2 sliced Green onions (optional)

Directions:

-Start cooking the tortellini as directed on package.

-Meanwhile cook the ground beef in a large skillet before draining any excess grease.

-Mix in the seasoning followed by the enchilada sauce, the tortellini, beans and corn into the beef and bring to a simmer.

-Top with the cheese, place under the broiler until the cheese melts / browns

- optional: top with sour cream, cilantro and/or green onions
