Chicken & Rice with Drizzle Sauce:
This recipe was submitted by CC Wife Grace K. and this meal is one of her favorite childhood meals! We hope you enjoy!
INGREDIENTS:
- chicken thighs (can also use pork thighs, though i never have).
- 1 cup soy sauce
- 1/2 cup rice vinegar (can also use white vinegar, it’s just more pungent)
- 1 tablespoon chopped garlic
- 2 bay leaves
- 1/2 tsp black pepper
- 1 1/2 cups coconut milk (optional)
- 1 cup water
DIRECTIONS:
add soy sauce, vinegar, garlic, pepper, bay leaves, a cup of water and half the coconut milk into a covered saucepan big enough to hold all the chicken in one layer (i use my dutch oven on the stove for this). bring this to a boil over high heat.
add the chicken then reduce the heat to medium-low and cook covered, turning the chicken over once or twice. you want the chicken to be *almost* done, about 20 minutes.
remove chicken from the liquid and pat dry with paper towels. grill, roast, or broil the chicken at 450° in the oven for about 4 inches from the heat source until crispy, turning as necessary. this broiling process takes about 10-15 minutes total and helps if you start with the bottom side up so you finish with the tops getting crispy.
while the chicken is broiling in the oven, boil the rest of the sauce on the stovetop along with the remaining coconut milk over high heat until you’ve reduced it down to about a cup.
serve the chicken over rice and drizzle with the sauce.
