Brown Sugar Crumble Pumpkin Bites:

This fall recipe was submitted by Sarah B. and it is the perfect recipe to help get you FALL into the fall season!

Muffins:
* 2 cups all purpose flour
* 1 1/2 cups granulated sugar
* 1 tsp baking soda
* 2 tsp baking powder
* 2 tsp cinnamon
* 1 tsp nutmeg
* 1/2 tsp salt
* 3 large eggs, room temperature
* 1 cup oil
* 15 oz pumpkin purée
Topping:
* 1 cup all-purpose flour
* 2/3 cup brown sugar
* 1 stick butter-melted
* 1 teaspoon cinnamon
* 1/4 cup chopped nuts of choice

Directions:

Muffins:
Mix together wet ingredients with a mixer.
In a small bowl mix together all dry ingredients and spices.
Slowly mix dry ingredients into wet, do not over work the batter.

Let rest 5-10 minutes.

Topping:
While the batter rests, mix the flour, sugar and cinnamon together.
Use a fork and mix the butter into the flour mixture until a crumb forms.
Work nuts into crumb.

Preheat the oven to 350°.
Add batter to mini muffin pan - filling half to 3/4 full - and sprinkle crumble on top.
Bake 17-20 minutes


These freeze well and also bake well as a bread loaf with the crumble on top.
