The Best Chewy Chocolate Chip Cookies:

NOTE: After years of tweaking, I've finally found the best chewy chocolate chip cookie recipe! This is a household favorite treat that never lasts long when I bake them. Recipe yields about 30 cookies.

Ingredients:
--2 sticks(1 cup) of softened Butter
--1 cup Brown sugar (dark or light)
--1/2 cup White sugar
--1 tsp Vanilla extract
--2 room temperature Eggs
--3 cups Flour (spooned and leveled)
--1 1/2 tsp Baking soda
-- 3 cups Semi-sweet chocolate chips

Instructions:
1. Preheat your oven to 350 degrees F and line 2 large baking sheets with parchment paper or a silicone baking mat.
2. In a large bowl or stand mixer, beat the butter until fluffy, then add the brown sugar and white sugar and beat well until fluffy. (If you forgot to set out the butter to soften, you can use the 'soften' option on your microwave).
3. Add the vanilla and one egg. Beat well. Add the next egg. Beat, scraping the sides.
4. Add the flour but don’t mix it in yet. Use a small spoon to stir the baking soda and salt into the flour.
5. Beat until there are still a couple streaks of white flour (Overmixing will affect texture!)
6. Add the chocolate chips and mix until just BARELY combined.
7. Use your hands, an ice cream scoop, or a medium cookie scoop to shape cookie dough (approximately golf ball sized, spread out 2 inches apart on the pan).
8. Bake at 350 for about 9-11 minutes, or until just BARELY starting to brown around the edges.
9. Immediately after you take them out of the oven use two spoons to gently push each cookie together so that it comes up a bit in the middle. This will give them that delicious lifted/chewy look and texture!
10. Let the cookies cool on the pan for several minutes.

For making ahead: Shape the dough into balls, seal in a ziplock bag, and freeze for up to 3 months. No need to thaw before baking, simply put them frozen into a preheated oven and add 2-3 minutes to the bake time. Once the dough has been chilled or frozen, there is no need to smoosh together with the spoons.
