Cucumber Avocado Salad

Cucumber Tomato Avocado Salad:

Ingredients:

  • 2 cucumbers, diced

  • 2 large tomatoes, diced

  • 1 ripe avocado, diced

  • 1/4 red onion, thinly sliced

  • 2 tablespoons chopped fresh cilantro

  • 1 tablespoon olive oil

  • 1 tablespoon fresh lime juice

  • Salt and pepper to taste

Directions:

In a large mixing bowl, combine the diced cucumbers, tomatoes, avocado, red onion, and chopped cilantro.

Drizzle olive oil and fresh lime juice over the salad.

Gently toss until all ingredients are evenly coated.

Season with salt and pepper according to your taste.

Serve chilled or at room temperature.

(I typically do about half the purple onion opposed to 1/4 and 2 avocados

I also don’t measure out the olive oil or lime juice, I just add and stir and taste as I go along.)
